Grilled Apples with Pancetta

Pancetta is an Italian bacon, which is not smoked.  It pairs wonderfully with crisp sweet-tart apples.  This recipe serves two and goes well with crusty bread and super-sharp cheddar or bleu cheese.


Prepared apple wedges, ready-to-grill
Ingredients


  • 1 Apple  crisp and sweet-tart such as a Macoun.
  • 8 slices of Pancetta
  • Juice of one lemon
  • Freshly ground black pepper

Method


Core and cut the apple into eight wedges.  Coat the wedges with lemon juice to prevent browning.



Grilled apples; delicious!
Wrap each apple wedge with one slice of pancetta covering the cut side.  Secure with toothpicks.


Season the pancetta-wrapped apples with freshly ground black pepper.

Place the apple wedges on the grill with the meat-side down over very hot coals.  Turn when the pancetta is crisp.  Cook the second side an equal amount of time.  Remove to a platter and serve.
